Japanese Kaiseki Cake

This was a really special cake done for the owners of a high-end Kaiseki restaurant in Singapore. We were asked to replicate 3 of the chef's dishes out of sugar by our client. Now, you must know that every dish that the chef's whips out looks/is a piece of art, so we knew we were treading on really thin ice over here! 

But, we are absolutely relieved and honored that we were given not just nods of approvals, but also compliments from the chef himself! : )
